January Discovery Kitchen Makes Burgers from Potatoes, Kale Salad

McCracken Hall 120 was bustling with students and community members alike for the Discovery Kitchen event on Jan 30. Folks gathered around to learn how to make a delicious, locally sourced meal.

In a continuation of successful workshops developed by Community Food Initiatives and the Farm to OHIO Working Group in spring 2019, 15 people met in Chef Thom’s Restaurant, Hotel, and Tourism demonstration kitchen to cook a simple burger made out of potatoes, and a fresh kale, apple, and roasted beet salad with a honey vinaigrette. Most ingredients were grown within Athens County and were in season to establish resilience within the regional food system.

Led by Chef Robin, students and Community Food Initiatives folks learned how to properly wash and cut vegetables and herbs, follow a recipe, and cook on the stove and in the oven. When finished, people ate their creation family-style and could take leftovers and recipes home to cook for themselves.

It was a fun evening full of learning and good food, allowing old and new chefs to learn from one another and honor tasty local produce in Athens.
